Chicken Stew with Nick Massie

Another tasty recipe by Nick Massie. This time it’s a chicken stew.

Looks pretty involved, but isn’t all that hard to make.

  • quarter two whole chickens (or just use your normal chicken filets)
  • spice it up with oregano, Italian seasoning, salt, pepper, chili, white pepper, paprika and olive oil
  • cut up onions, carrots, mushrooms, peppers, squash (meh)
  • throw everything in your biggest pot
  • add 3 cups of red wine, let it reduce it a little
  • add whole canned tomatoes and tomato sauce
  • add pieces of a spicey sausage, he uses elk sausages
